Bannock is a type of fry bread that originated in Scotland. It was brought to Canada, where the indigenous people adopted it. Bannock can be breakfast, brunch or with a cup of tea. To make it extra Canadian, serve it with maple syrup.
Ingredients
- 1 cup all purpose flour (or gluten free flour)
- 1 tsp aluminum free baking powder
- 1/4 sea salt
- 2 tbsp neutral oil, such as avocado oil
- 1 tbsp filtered water, as needed
- 1/2 cup raisins (optional)
Preparation
- In a large bowl, combine all dry ingredients. Add raisins if using.
- Mix in the oil and a bit of water at a time. It should just come together without being too wet or sticky.
- Knead into a ball and then flatten to about 2 inches thick.
- Fry in oil on medium heat for 5 minutes per side, or bake in the oven for 20 minutes at 325°.
- Serve with pure maple syrup!
