Ingredients
- ¾ cup of grass fed, Greek yogurt
- ½ cup frozen blueberries
- ¼ cup of Homemade Granola
Homemade Granola ingredients
- 2 cups of thick cut oats
- 1 cup of chopped almonds
- 1 cup of chopped walnuts
- ¼ cup of unsweetened shredded
- coconut
- 1 tsp cinnamon
- ¼ tsp ground cloves
- ¼ ground nutmeg
- Pinch of sea salt
- ¼ cup honey
- ¼ cup melted coconut
- 2 tsp pure vanilla
Preparation
- Preheat oven to 250º. In a large bowl, combine all ingredients for granola. Mix well.
- Spread granola out onto a large baking sheet in a single layer.
- You may need to use two baking sheets if one isn’t big enough. Rotate the sheets halfway through baking.
- Pop into the oven and bake for 45 minutes, mixing every 10-15 minutes.
- Allow to cool and transfer to a large container or mason jar.
- The night before you want your parfait, scoop the yogurt into a mason jar and layer it with the frozen blueberries, then pop it into the fridge.
- The berries will melt into your yogurt overnight, making it sweet and syrupy for you in the morning.
- Add your granola once ready to eat and swoon.
